Hot Potato Food Truck

CMNH Communications Intern, Dave Nassoura had the enviable task of sampling some of the food from one of our August 27, 2016 Dover Mini Maker Faire food vendors.

Hot Potato Food Truck, based out of Newmarket, serves Barbecue and specialty fries all over New England. The truck was started by two brothers who both have experience working in the food industry, one in barbecue and one in the Toronto food scene. A little over a year ago the two decided to come together and use each of their strengths by experimenting with smoked meats, BBQ techniques and of course French fries. Hot potato has a simple but efficient menu that includes pulled pork, smoked sausage and poutine, which is made up of fries, cheese, gravy and usually some sort of meat. The Ayotte brothers like to have fun with what they make, often changing their menu week-to-week with a variety of things like Jamaican jerk pulled pork and beer battered haddock fish tacos.

I hit the Hot Potato food truck on a 90-degree night at Henry Law Park in downtown Dover. I could smell the smoked meats as I walked up to the window of the truck. I decided to play it safe and go with a classic pulled pork sandwich with fries. When I got the food I knew it was going to be one of the greatest pulled pork sandwiches I’d ever eaten before I even took a bite. I was holding the perfect pulled pork sandwich piled high with coleslaw and tastefully dressed with extra BBQ sauce. As I took my first bite I quickly realized the passion and time that was put into this sandwich. This sandwich had to have been made by someone who is dedicated to the craft and has gone through a lot of trial and error in order to arrive at such a spectacular product. The levels of flavor were so complex and strong. I couldn’t get it into my stomach fast enough! And all around and beneath the sandwich is an endless supply of fries.
